Texas Caviar by Kathy Brinkly

4 Cans Black Eye Peas - (drained)
4-5 Roma Tomatoes -Chopped)
5 Green Onions (3/4 cup)
1/2 Jalapeno pepper
Cayenne Pepper to taste
8 oz. Wishbone Italian Dressing
4 Avocado

Chop tomatoes, green onions, and mix all ingredients. Let set overnight in refrigerator and add avocado before serving. Serve with crackers or chips. You can adjust the Italian dressing to your taste.
